Been thinking about this soup all day, came in a dream yesterday. Finally got around to making it and it’s so creamy and delicious with subtle flavors.
Sauté 2 sliced leeks in a medium sized pot. Season with a little pink salt.
Add 2 garlic cloves and cook for a minute.
1 celery stalk or 2
2 small Zuchinni
2 cups of spinach leaves
2 stalks of parsley
piece of ginger.
Barely cover with water. When it’s about to boil turn off the heat and cover. Let it sit until the spinach leaves have wilted. Transfer the mixture to a blender, add 1/2 cup of cashews, 1 lemon juiced and a couple more stalks of parsley. Blend until creamy. Add 1 tbls of white miso and blend again. Serve topped with coconut cream and hemp seeds.
