Avocado and ginger are a superb addition to this traditional favourite.
beet, grated</br> 1 carrot, grated</br> 1 red pepper, cut in pieces</br> 1 celery stalk, cut in pieces</br> 1 avocado</br> 1 Tbsp. minced ginger</br> 2 garlic cloves</br> 2 cups freshly squeezed orange juice</br> 2 Tbsp. olive oil</br> 2 Tbsp. cider vinegar or lemon juice</br> 1 Tbsp. coriander</br> A pinch of cayenne pepper, optional
½ cup sprouts of choice</br> ¼ cup chopped walnuts</br> ¼ cup minced cilantro
Place all ingredients in a blender. Blend on high until the mixture is smooth and creamy. If it’s too thick, dilute with purified water as needed .Season to taste. </br>To serve, garnish the soup with the sprouts, nuts and cilantro.
