Delicious and beautiful salad with a simple creamy sauce.

3 Tbsp. tahini</br> 1 garlic clove</br> 1/4 cup fresh lemon juice</br> 2 Tbsp. apple cider vinegar</br> 2 Tbsp. fresh carrot juice </br> 1 Tbsp. olive oil</br> 1 1/2 Tbsp. sweetener of choice</br> 2 Tbsp. dill
3 apples, cut in thin slices</br> 1 small fennel bulb, thinly sliced</br> 1/2 cup raw walnuts</br> 1/4 cup minced parsley</br> 1 crispy lettuce, torn
To make the sauce, mix all the ingredients in a blender until creamy and smooth. Taste and adjust seasoning with salt and pepper. Set aside. To serve the salad, alternate the lettuce, apple slices and fennel slices to build a tower. Drizzle with the dressing and sprinkle with the walnuts and parsley.
Add 1/2 cup of dried mulberries for a sweet taste and longevity kick.
