2 cups of milk of choice (nut, seed, coconut…) </br> 1 cup of oatmeal or quinoa flakes</br> 1 to 2 carrots, grated </br> 1 small piece of ginger, grated (optional) </br> 1/2 teaspoon of cinnamon </br> 1/2 teaspoon of ground cardamom </br> 1/4 teaspoon of nutmeg</br> a pinch of sea salt</br> sweetener of your choice, to taste
Place all ingredients in a medium saucepan. Bring to a boil, reduce the heat and simmer for 5 minutes until the mixture thickens or until the desired consistency is achieved (I prefer the mixture on the liquid side). </br> Remove from the heat and sweeten to taste.</br> Sprinkle with pumpkin, seeds if you wish.
