Purple Cabbage Salad with Sprouts and Spinach

This sweet tart crunchy salad is addictive, good thing because it’s so amazing for your skin!

Serves

Ingredients

1 purple cabbage, thinly sliced</br> 2 cups sprouts (a mix or any you like)</br> 1 cup baby spinach (or watercress)</br> 1/4 cup chopped taw macadamias

Raspberry Dressing

1 cup raspberries</br> 1/2 cup fresh orange juice</br> 1/4 cup olive oil</br> 2 Tbsp. cider vinegar</br> 1 Tbsp. balsamic vinegar, optional</br> 1 Tbsp. white miso</br> 2 Tbsp. parsley</br> 1 tsp. thyme leaves</br> 1 garlic clove</br> 1 Tbsp. honey (or sweetener of choice)

Method

To make the sauce: blend all the ingredients in a blender until smooth and creamy. Taste and adjust seasoning with salt if needed.</br> To make the salad, place the cabbage in a bowl, add the raspberry dressing and mix gently. Let the cabbage marinate for a couple of minutes. When it’s time to serve, add the sprouts and spinach, mix gently. Sprinkle with the macadamias and serve.
