Grounding Green Soup

Been thinking about this soup all day, came in a dream last night. Finally got around making it and it’s so creamy and delicious with subtle flavors. This soup is extremely nourishing and grounding.

 

Melt 1 tbsp of Ghee or Coconut oil in a a medium sized pot.

Sauté 2 sliced leeks in a medium sized pot. Season with a little pink salt.

Add 2 garlic cloves and cook for a minute until they start to turn golden.

Add:

1 chopped celery stalk or 2

2 chopped Zuchinni

2 cups of Spinach leaves, can use chard instead

2 stalks of Parsley, with leaves on

1 tsp of Reishi*

piece of ginger, as much or little as you like

Barely cover with water. When it’s about to boil turn off the heat and cover. Let it sit until the spinach leaves have wilted. Transfer the mixture to a blender, add 1/2 cup of cashews, 1 lemon juiced and a couple more stalks of parsley. Blend until creamy. Add 1 tbls of white miso and blend again. Serve topped with coconut cream and hemp seeds.
