Ingredients

1 cup of dried activated Macadamia nuts</br> 3/4 cup of desiccated coconut</br> 2/3 cup of pitted Medjool dates</br> 2 tbsp of raw cacao powder</br> 1 tbsp of carob powder (can be substituted for more cacao)</br> 2 tbsp of melted cacao butter </br> 1 tbsp of raw cacao nibs</br> 1/4 tsp of raw vanilla powder</br> pinch of pink salt

Method

Place the Macadamias and coconut in a food processor. Process until small pieces form. Add the dates, cacao, carob (if using), melted cacao butter, vanilla and salt. Process until mixture reaches a dough-like consistency. Add the cacao nibs and pulse until mixed. Roll the mixture into equal-sized balls (use approximately 1 tbsp of mixture per ball), firmly squeezing in order to bring them together. Roll in cacao powder. Keep in the fridge for up to 2 weeks.
