Carrot and Cilantro Soup

A creamy refreshing soup bursting with flavour and beauty enhancing nutrients.




2 cups of fresh carrot juice; 1 Tbsp. of fresh ginger; 1 avocado; 1/2 cup cilantro; 1/4 cup parsley; 1 Tbsp. olive oil; 2 Tbsp. Tamari; Pinch of pink salt


Combine the carrot juice, ginger and avocado in a blender. Blend on high until smooth and creamy. Add the herbs and pulse just to mix. Add the olive oil and tamari, mix and taste. Adjust seasoning if needed. Serve topped with extra avocado cut in cubes and some cilantro leaves.
