Raspberry Chia Pudding

I love chia pudding and how it blends perfectly with so many flavors. So easy and full of beautifying nutrients.

Serves

Ingredients

2 cups of homemade coconut milk (or other of choice)</br> 4 pitted Medjool dates (or sweetened to taste with sweetener of choice)</br> 1 cup of raspberries</br> 1/2 tsp of raw vanilla powder</br> 1 tsp of Reishi , optional but oh so good for boosting your immune system</br> 1/4 cup of Chia seeds

Method

Blend all the ingredients, except the chia seeds, in a blender until smooth and creamy. Add the chia seeds and pulse just until mixed.</br> Transfer to a jar and close well. Shake a couple more times for the next 10 minutes before placing in the fridge for 6 hours or overnight.</br> Serve topped with fruit and any other ingredient you like
