Salad for the skin

This crunchy crisp salad is full of flavour and beauty enhancing ingredients.




2 to 4


3 Tbsp. tahini</br> 1 garlic clove</br> 1/4 cup fresh lemon juice</br> 2 Tbsp. apple cider vinegar</br> 2 Tbsp. fresh carrot juice</br>  1 Tbsp. olive oil</br> 1 1/2 Tbsp. honey (or other sweetener of choice)</br> 2 Tbsp. dill</br> 1/2 tsp. turmeric


3 apples, cut in thin slices</br> 1 small fennel bulb, thinly sliced</br> 1/2 cup raw walnuts</br> 1/4 cup minced parsley</br> 1 head crispy lettuce, torn


To make the sauce, mix all the ingredients in a blender until smooths and creamy. Taste and adjust seasoning with salt and pepper if needed.

To Serve

Alternate the lettuce, apple and fennel to build a tower. Drizzle with the dressing and sprinkle with the walnuts and parsley.</br> </br>
Tweak it: </br>Add 1/2 cup of dried mulberries for a sweet taste and longevity kick.
