Spirilise the zucchinis into noodles using a spiraliser. Place in a large bowl. Drizzle with some olive oil and season to taste with salt.</br> Tear the basil leaves into a food processor. Add the remaining ingredients. Season to taste with salt and pepper. Pulse until creamy.</br> Pour the sauce over the zucchini noodles. Toss well until combined..</br> To serve add fresh basil leaves and cherry tomatoes.</br> You can choose to add 2 cups of rocket too.
