White Bean Sweet Potato Cakes

One of our new Workshops is all about Veggie Burgers her is a little taste of what will be available.

White Bean Sweet Potato Cakes

Serves 4

2 medium sweet potatoes, steamed or baked

1 cup white beans, cooked

2 scallions, thinly sliced

2 inch piece of fresh ginger, grated

2 tbsp nori, finely chopped

1 tbsp white miso paste

1 tbsp sesame oil

salt and pepper to taste

1/2 cup sesame seeds

wasabi avocado sauce

1 medium avocado

1/2 cup coconut yogurt, unsweetened

2 tsp of wasabi paste

1/4 cup cilantro, chopped

1 lime, zest and juice

salt, to taste

 

Place the sweet potato and white beans in a bowl. Use a fork to smash everything together, you could use a food processor but its nice to have chunky vegetables in your patties. Add remaining ingredientes except the sesame seeds. Mix until just combined.

Preheat the oven to 200º. Line a baking tray with parchment paper.

Shape 1/4 – cupfuls of the mixture into patties and roll in the sesame seeds. Place on the prepared tray. Cook, turning halfway, for 15 minutes or until golden.

While the patties are cooking make the wasabi sauce. Place all ingredientes in a blender and pulse until smooth but still with little flecks of herbs.

Serve the patties with the sauce, pickles ginger and some lime wedges.
